Virtual Coffee Date

… If we were having a coffee date, I would tell you that we did indeed survive Winter Storm Nemo. I find it absolutely ridiculous that the Weather Channel has decided to name winter storms, and that my dad suggested that the reason they did it was so that we could use the names on Twitter. I think this is a distinct possibility. In our area, we got about a foot of snow and it looks very pretty from our fourth floor apartment. I’m so glad we live in an apartment because we don’t have to do any shoveling or plowing!

… If we were having a coffee date, I would tell you that to keep ourselves occupied during Winter Storm Nemo, we invited our next door neighbors and our downstairs neighbors for a game night. It was so much fun! We played Apples to Apples and Cranium. Team Wives won, obvs. Our social life has dramatically improved over the last year. Between our church Quarterlife group, our Meetup young couples group, Junior League and various other random friends we have made in the area, it really does feel like home. I’m actually really happy here. (Although, I still miss living in NYC.)

… If we were having coffee, I would of course gush all about the Paleo diet and tell you about some of our recent adventures in the kitchen, including pumpkin pancakes (from Practical Paleo), banana bread (a hodgepodge of two recipes Erik found) and a mexi taco salad. In fact, if we were really having coffee, I might very well be drinking an unsweetened plain black tea, because I’m trying to limit my non-Paleo food choices, and dairy is one of them.

… If we were having coffee, I would probably talk quite a bit about my college experience and the nerve-wracking process of applying for nursing school. Currently I’m taking three classes (with two labs) at a local community college. I’m taking Anatomy & Physiology, Microbiology and Statistics. I love the science classes, but find Stats a little boring (although easy, which is good). I sent in an application to Concordia College here in New York, and now I’m working on an application for NYU. That one is a bit more work because it requires a personal essay — yikes!

… If we were having coffee, I would tell you about my foray into running, and how I haven’t yet picked a 5K to run in, but that it’s definitely on my to do list. I’m impatiently waiting for the weather to get warmer because I just really hate running on a treadmill for a variety of reasons. It’s just so awkward! But March is typically much warmer and that will make it easier to start running again for me. Only a few short weeks until Spring!

    I wish I wasn’t sooo behind on my personal blog goal… otherwise I’d totally steal this meme!

    Not much “new” in my life… just trying to juggle wedding planning, full-time job, and freelance jobs! Plus everything else life throws at us! I might even add to that by becoming a consultant for one of those catalog companies. I have to decide if I wanna take that on now or not…

      Oh, I am totally stealing this meme…I havent updated my blog since Christmas…hence the reason my last post is “Merry Christmas and Happy New Year”! Also, glad to hear you loved the pumpkin pancakes, I have the Practical Paleo book and that recipe has been calling out to me…and I have all the ingredients! No excuses!

        Those coffees are SO pretty! I love it when I get a latte and they do something cool with the foam!

        That is awesome that you have formed a community and met new people. I have never really known my neighbors in any apartment I’ve lived in! Game night sounds like the perfect way to spend a snowed in night! We did not get the crazy storms that many others did and just got maybe 4″ yesterday. Which is good because I am totally over winter!
